Easy Yule Log DIY

Just a very quick post to share with you the easiest and simplest Yule Log there is. I remember doing this at primary school and it has always stuck with me. It's great to do with kids and as we're all usually all so tight for time around the festive season this is a very quick way to still make something really delicious and lovely to look at!

So shop bought Swiss Rolls, but husband loves the really cheap ones, really sugary and I think a little tasteless! But adding lovely thick butter icing to them does make them so much nicer and you can nearly always find one in any corner shop. However, if you can, I adore the M&S coffee ones best - I once ate a while one to myself while doing my university dissertation!

So for the butter icing I used the Hummingbird chocolate butter icing recipe, which is:
100g unsalted butter
300g icing sugar
40g coco powder
40ml whole milk.

Creaming the butter and sugar first, then adding the coco and milk bit by bit. Then with a palette knife or spatula, spread over the swiss roll - you can be as rough as you like, it is suppose to be a log! Then take a fork and run it over the surface to make the lines, and shake on yet more icing sugar.

To decorate I used these gorgeous silver unicorns from other letters.
